There are eight major cuts of beef:

Chuck (Chuck Center Roast, Short Ribs/BBQ Ribs, Cross Rib Roast)

Rib (Prime Rib Roast, Ribeye Steak, and Back Ribs)

Loin (Filet Mignon, Chateaubriand, T-Bone Steak, Tri-Tip, Sirloin Tip Steak, Sirloin Tip Roast, New York Steaks)

Round (Top Round, Bottom Round, Eye of Round, London Broil, Swiss Steaks, and Rump Roast)

Flank (Flank Steak)

Ground beef or stew meat can be made from any cut. Bones (including neck bones) and offal (tongue, liver, kidney, heart, oxtail) can be included at no additional charge. Beginning in 2023, customers may choose either standard cuts or specific cuts. For example, one customer may want more steaks and fewer roasts, while another customer may want more ground beef.
